Description

These Chicken Patties are a delicious and versatile dish made with ground chicken, fresh vegetables, and savory spices. Perfect for a quick meal or snack, these patties can be pan-fried for a crispy exterior or baked for a lighter option. Enjoy them with a variety of sides or as a finger food at parties.

Ingredients

1 pound (500g) ground chicken

1 small onion (80g), finely chopped

Green onion, chopped (to taste)

5 cloves garlic, minced

1 medium carrot (3 oz90g), grated

Half a bunch fresh parsley, chopped

1/4 cup (35g) breadcrumbs

1 potato (9 oz – 250g), grated and squeezed

2 eggs

1 ½ tsp (7g) salt

1 tsp (3g) ground black pepper

Olive oil, for cooking

Instructions

    • In a large bowl, combine the ground chicken, finely chopped onion, green onion, minced garlic, grated carrot, chopped parsley, breadcrumbs, grated and squeezed potato, eggs, salt, and pepper.

    • Mix until everything is well combined, but avoid overworking the mixture to prevent tough patties.

  1. Pan-Fry the Patties:

    • Heat 1 tablespoon of olive oil in a nonstick skillet over medium heat.

    • Scoop spoonfuls of the chicken mixture and flatten them slightly to form patties. Place them into the hot skillet.

    • Cook for 4 minutes or until the bottom is golden and crispy. Flip and cook the other side for an additional 4 minutes.

    • Transfer the cooked patties to paper towels to drain excess oil.

  2. Bake the Patties (Optional):

    • Preheat your oven to 400ºF (200ºC) and line a baking sheet with parchment paper.

    • Place the patties on the prepared baking sheet and lightly spray them with olive oil.

    • Bake for 25-30 minutes, or until golden brown and fully cooked.

  3. Serve:

    • Serve the patties with your favorite dipping sauce (e.g., ranch, ketchup, or spicy mayo) or alongside a fresh salad, roasted vegetables, or rice.

Notes

  • Spicy Patties: Add cayenne pepper, red pepper flakes, or chopped jalapeños for extra heat.

  • Cheese-Stuffed Patties: Stuff the patties with a piece of cheese (cheddar, mozzarella, or pepper jack) before cooking.

  • Herb Variations: Try other herbs like thyme, oregano, or basil for different flavors.
