Ingredients
2 small chicken breasts
1 Italian style loaf of bread
2 tablespoons poultry seasoning (or a mix of salt, pepper, and garlic powder)
1 ½ sticks unsalted butter
2 tablespoons minced garlic (or garlic paste)
2 tablespoons chopped parsley
1 teaspoon crushed red pepper flakes
2 tablespoons olive oil
¼ cup shredded parmesan cheese
½ cup shredded mozzarella cheese
½ cup heavy cream
Instructions
Start by cutting the chicken breasts into ½-inch pieces. Transfer them to a bowl, drizzle with 1 tablespoon of olive oil, and season with 1 tablespoon of poultry seasoning (or your salt, pepper, and garlic powder mix). In a medium pan over medium heat, cook the chicken until it’s golden brown and cooked through. Once done, remove from the pan and set aside.
Slice the Italian loaf of bread lengthwise into two halves. In a small bowl, mix 1 stick of melted butter, 1 tablespoon of minced garlic, 1 tablespoon of chopped parsley, and 1 teaspoon of crushed red pepper flakes. Spread this flavorful garlic butter mixture evenly on both halves of the bread.
Toast the bread in a preheated 350°F (175°C) oven for 5-10 minutes, checking after 5 minutes to ensure it reaches your desired level of crispness.
In the same pan used for the chicken, melt ½ stick of butter over medium-low heat. Stir in 1 tablespoon of minced garlic and cook for 2-3 minutes until fragrant.
Lower the heat to low and add ½ cup of heavy cream, ¼ cup of shredded parmesan cheese, and 1 tablespoon of chopped parsley. Simmer the sauce on low heat, stirring continuously, until it thickens slightly (about 3-5 minutes). Remove from the heat.
Spread half of the prepared alfredo sauce over the toasted garlic bread. Top with the cooked chicken, shredded mozzarella cheese, and the remaining alfredo sauce.
Return the bread to the oven and bake for another 5 minutes at 350°F (175°C), or until the mozzarella cheese has fully melted and is bubbling.
Once the cheese is melted and bubbly, remove the garlic bread from the oven. Slice the bread into 2-3 inch pieces and serve warm. Enjoy this comforting, indulgent dish with your favorite side or as a standalone treat!
