Ingredients
Meat and Vegetables
- 1 lb ground beef
- 1 tbsp olive oil
- ½ onion, chopped
Seasonings and Sauces
- 1 packet taco seasoning (or homemade equivalent)
- 1 can (15 oz) enchilada sauce
Other Ingredients
- 6 small corn tortillas, cut into strips
- 1 cup shredded cheddar or Mexican blend cheese
- ¼ cup sliced olives (optional)
- Green onions & cilantro for garnish
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the enchilada skillet.
- Cook Beef and Onions: In an oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and ground beef, cooking until the beef is fully browned and the onions are softened, about 5-7 minutes. Stir occasionally to ensure even cooking.
- Add Seasoning and Sauce: Stir in the taco seasoning packet and pour in the enchilada sauce. Mix well to combine the flavors throughout the beef mixture.
- Incorporate Tortilla Strips: Add the strips of corn tortillas to the skillet and stir gently to coat them well with the beef and sauce mixture, allowing the tortillas to absorb some sauce.
- Add Cheese and Olives: Sprinkle the shredded cheese evenly over the top of the skillet mixture. Add sliced olives if using.
- Bake: Place the oven-safe skillet in the preheated oven and bake for about 10 minutes, or until the cheese is melted, bubbly, and golden brown.
- Garnish and Serve: Remove from oven and garnish with chopped green onions and cilantro. Serve hot and enjoy your cheesy skillet enchilada bake!
