Description
Cheesy Meatloaf Bites are a mini version of classic meatloaf, stuffed with melted cheddar cheese and glazed with a sweet mustard-ketchup topping. Perfect for weeknight dinners, parties, or meal prep!
Ingredients
1 pound ground beef
½ cup breadcrumbs
¼ cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Worcestershire sauce
½ cup grated cheddar cheese
½ cup ketchup
1 tablespoon mustard
¼ cup chopped fresh parsley (plus extra for garnish)
Instructions

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, and Worcestershire sauce until just combined.

Take a tablespoon of the mixture, flatten it, add a bit of cheese, and wrap the meat around to form a ball. Place on the baking sheet.

Mix ketchup and mustard in a small bowl and brush over each meatloaf bite.

Bake for 25–30 minutes, or until cooked through and glazed.

Garnish with parsley and serve warm.
Notes
- Do not overmix the meat for best texture.
- Can be made ahead or frozen after baking.
- Swap cheddar for mozzarella or use ground turkey for a leaner version.
