Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes, drained
- 1 1/2 cups shredded cheddar cheese
- Fresh parsley, optional
Instructions
- Heat the skillet: Heat olive oil in a large skillet over medium heat to prepare for cooking the ground beef and vegetables.
- Cook the ground beef: Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat if necessary to reduce greasiness.
- Sauté onions: Add the diced onion to the skillet and cook for 3–4 minutes until the onions are softened and translucent.
- Add spices and garlic: Stir in minced garlic, paprika, dried oregano, salt, and black pepper. Cook for about 30 seconds until fragrant to enhance the flavor.
- Combine rice and liquids: Stir in the uncooked rice, beef broth, and drained diced tomatoes. Mix well to evenly distribute all ingredients.
- Simmer the mixture: Bring the mixture to a simmer, then reduce heat to low. Cover the skillet and cook for 18–20 minutes until the rice is tender and has absorbed the liquid.
- Add cheese topping: Sprinkle shredded cheddar cheese evenly over the cooked rice and beef mixture.
- Melt the cheese: Cover the skillet again and cook for an additional 2–3 minutes until the cheese is melted and gooey.
- Garnish and serve: Optionally, garnish with fresh parsley for a pop of color and fresh flavor. Serve the skillet hot for a satisfying meal.
Notes
- Use long-grain rice for the best texture and to prevent mushiness.
- Swap cheddar cheese for Monterey Jack or mozzarella for a different cheesy flavor.
- Add diced bell peppers or corn to incorporate extra vegetables and nutrients.
