Description
A comforting casserole with tender chicken breasts baked in a creamy mix of rice, cheese, soups, and onion soup mix. Simple to prepare and perfect for weeknight dinners or meal prep.
Ingredients
1½ cups long grain white rice
2 cans cream of chicken or mushroom soup
1 cup water
2 cups milk
1 envelope onion soup mix (or homemade)
1½ cups shredded cheddar cheese
3 boneless skinless chicken breasts (or thighs)
Salt and pepper to taste
Instructions

Preheat oven to 350°F (175°C). Grease baking dish.

Mix rice, soups, milk, water, and onion soup mix in a bowl.

Pour mixture into baking dish, stir in half the cheese.

Nestle chicken on top, season with salt and pepper.

Cover tightly with foil and bake for 1.5 to 2 hours.

Remove foil, top with remaining cheese, bake uncovered 5–10 minutes.

Let rest 15–20 minutes before serving.
