This cheesy sausage and veggie bake is the ultimate one-pan comfort food. Packed with tender broccoli and cauliflower, seared smoked sausage, and a rich cheddar cheese sauce, it’s a low-carb, gluten-free dinner that’s perfect for busy weeknights or cozy weekends.
Ingredients
3 cups cauliflower florets, lightly steamed
2 cups broccoli florets, lightly steamed
12 oz smoked turkey sausage, sliced
2 tbsp butter
½ onion, diced
2 tsp minced garlic
2 oz cream cheese, softened
⅔ cup heavy whipping cream
1½ cups shredded cheddar cheese
Salt and pepper, to taste
Instructions

Preheat oven to 350°F. Lightly grease a 9×9-inch baking dish.

In a skillet over medium-high heat, cook the sliced sausage until browned. Set aside.

In a separate pot, melt butter over medium heat. Add onion and sauté until softened.

Stir in garlic and cook for 30 seconds. Add cream cheese and stir until melted.

Pour in the heavy cream and whisk until smooth. Simmer until slightly thickened.

Stir in cheddar cheese and season with salt and pepper.

In a mixing bowl, combine the broccoli, cauliflower, and sausage. Pour the cheese sauce over and mix well.

Spread into the baking dish and bake for 15–20 minutes, until bubbly.
