Description
These savory waffles bring together golden cornbread, spicy jalapeños, and melty cheddar cheese in the perfect crispy-on-the-outside, fluffy-on-the-inside bite. Great for brunch, dinner, or whenever you want a Southern-inspired twist!
Ingredients
1 cup cornmeal
1 cup all-purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup buttermilk
¼ cup unsalted butter, melted
2 large eggs
1 cup sharp cheddar cheese, shredded
⅓ cup pickled jalapeños, chopped
1 tbsp honey (optional)
Cooking spray or butter for waffle iron
Instructions

Preheat your waffle iron and grease it lightly.

In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.

In another bowl, mix buttermilk, melted butter, eggs, and honey.

Pour wet into dry and stir until just combined.

Fold in cheddar and jalapeños.

Pour ~½–⅔ cup of batter into waffle iron and cook 4–5 min until golden and crisp.

Serve hot with desired toppings.
Notes
- For extra crunch, sprinkle more cheese directly onto the waffle iron before adding batter.
