Ingredients

For the Beef Mixture:

1.5 lbs lean ground beef

1 yellow onion, diced

1 tablespoon chopped garlic

10.5 oz condensed cheddar soup

10.5 oz condensed cream of mushroom soup

½ cup milk

½ teaspoon salt

½ teaspoon pepper

2 cups shredded cheddar cheese

For the Biscuit Topping:

1 box Cheddar Bay Biscuit mix

1 cup shredded cheddar cheese

2 cups milk

¼ cup butter, melted

For Garnish:

Fresh chopped parsley

Instructions

Step 1: Prepare the Ground Beef Mixture

  • Heat a large skillet over medium-high heat and add the lean ground beef. Brown the beef, breaking it up as it cooks. Once browned, add diced onions and cook for 3-4 minutes until softened. Add in the garlic and cook for 1 minute until fragrant.

Step 2: Add Soups and Milk

  • Add the cheddar soup, cream of mushroom soup, and milk to the skillet. Stir well, season with salt and pepper, and continue stirring until fully combined. Let it simmer for a few minutes.

Step 3: Add Shredded Cheddar Cheese

  • Stir in the shredded cheddar cheese and cook until melted and well incorporated. Remove from heat and set aside.

Step 4: Prepare the Biscuit Topping

  • In a large mixing bowl, combine the Cheddar Bay Biscuit mix, shredded cheddar cheese, and milk. Stir until the mixture is smooth and creamy.

Step 5: Assemble the Casserole

  • Preheat the oven to 375°F (190°C). Spray a 9×13-inch baking dish with non-stick spray. Pour the creamy ground beef mixture into the dish, spreading it evenly. Top with the biscuit batter, smoothing it out over the beef mixture.

Step 6: Bake the Casserole

  • Bake in the preheated oven for 25-30 minutes, or until the biscuit topping is golden brown and fully cooked.

Step 7: Prepare the Butter Mixture

  • While the casserole is baking, melt the butter in a microwave-safe bowl. Add the seasoning packet from the Cheddar Bay Biscuit mix to the butter and stir until well combined.

Step 8: Add the Butter Topping

  • Once the casserole is out of the oven, brush the butter mixture over the biscuit topping. Let it rest for 5 minutes to allow the butter to soak in.

Step 9: Garnish and Serve

  • Garnish with fresh chopped parsley before serving. Enjoy this hearty, cheesy casserole!

Notes

  • Spicy Kick: Add red pepper flakes or hot sauce to the beef mixture for extra heat.
  • Vegetarian Version: Swap the ground beef for sautéed mushrooms, bell peppers, and zucchini for a vegetarian twist.
  • Cheese Swap: Try using different cheeses like mozzarella, gouda, or Monterey Jack for a different flavor profile
