Ingredients

Chicken and Seasoning

  • 2 chicken breasts
  • 1 tbsp olive oil
  • Salt & pepper to taste

Toppings

  • 4 slices fresh mozzarella
  • 2 tomatoes, sliced
  • 2 tbsp balsamic glaze
  • Fresh basil leaves


Instructions

  1. Preheat Oven: Preheat your oven to 400 °F (200 °C) to prepare for baking the chicken after searing.
  2. Season and Sear Chicken: Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for 2 minutes on each side to develop a golden crust.
  3. Prepare for Baking: Transfer the seared chicken breasts to a baking dish. Layer the slices of fresh mozzarella and tomato evenly on top of each chicken breast.
  4. Bake the Chicken: Place the baking dish in the preheated oven and bake for 15 minutes or until the chicken reaches an internal temperature of 165 °F (74 °C) and the cheese is melted and bubbly.
  5. Finish and Serve: Remove the chicken from the oven, drizzle with the balsamic glaze, and garnish with fresh basil leaves. Serve warm with your choice of pasta or salad.
