Description

Ingredients

Wet Ingredients:

2 large eggs

½ cup whole milk

¼ cup olive oil

2 tablespoons plain Greek yogurt or sour cream

Dry Ingredients:

1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

¼ teaspoon garlic powder

Add-ins:

¾ cup shredded mozzarella cheese

⅓ cup chopped sun-dried tomatoes (in oil, drained)

¼ cup chopped fresh basil

Optional: Pinch of black pepper or red pepper flakes for a kick


Instructions

  1. Preheat and Prep:
    Preheat your oven to 350°F (175°C). Grease and line an 8×4-inch loaf pan with parchment paper.

  2. Mix Wet Ingredients:
    In a large mixing bowl, whisk together the eggsmilkolive oil, and yogurt until smooth and well combined.

  3. Combine Dry Ingredients:
    In a separate bowl, stir together the flourbaking powdersalt, and garlic powder.

  4. Combine and Fold:
    Add the dry ingredients to the wet mixture and stir gently until just combined—be careful not to overmix. Fold in the shredded mozzarellasun-dried tomatoes, and chopped basil.

  5. Bake:
    Pour the batter into the prepared loaf pan and smooth the top. Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

  6. Cool and Slice:
    Let the bread cool in the pan for 10 minutes before transferring it to a wire rack. Slice and serve warm or at room temperature.

Notes

  • Add-Ins: For extra flavor, add a pinch of red pepper flakes or black pepper to the dough. You can also experiment with other herbs like oregano or thyme for a Mediterranean twist.
  • Customizing Flavor: If you want a stronger sun-dried tomato flavor, feel free to add more sun-dried tomatoes to the dough.
