Description
Enjoy a light and refreshing take on the classic California roll with this easy-to-make California Roll Cucumber Salad. Packed with cucumber, avocado, imitation crab, and a creamy sauce, it’s a perfect dish for any occasion!
Ingredients
For the Salad:
1 large English cucumber
4 imitation crab sticks, chopped
1/2 avocado, cubed
2 tablespoons kewpie mayonnaise
2 tablespoons whipped cream cheese
1 1/2 tablespoons soy sauce
2 teaspoons toasted sesame seeds
Instructions
Using a mandolin or a sharp knife, carefully slice the cucumber into 1/8-inch thick slices. This ensures the slices are even and consistent, ideal for mixing with the other ingredients.
In a large deli container or glass jar, place the sliced cucumber. Add the chopped imitation crab, cubed avocado, kewpie mayonnaise, whipped cream cheese, soy sauce, and toasted sesame seeds.
Seal the container or jar with a lid, and shake vigorously until all ingredients are well combined. This ensures the cucumber and other ingredients are evenly coated with the creamy mixtures and soy sauce.
Enjoy the salad immediately for the freshest taste. You can either eat it directly from the jar for a casual experience or serve it in a bowl for a more formal presentation. For an extra touch, sprinkle additional sesame seeds on top as a garnish.
Notes
- Add more veggies: You can add thinly sliced radishes or julienned carrots for extra crunch and color.
- Spicy kick: If you like a little heat, drizzle some sriracha sauce into the mix or sprinkle in a pinch of red pepper flakes.
- Make it vegan: Swap the imitation crab for plant-based crab or tofu, and use a dairy-free cream cheese alternative.
