Description
All the comforting flavors of classic cabbage rolls — ground beef, rice, and tomato — simmered together into a cozy, one-pot soup that’s perfect for a hearty and warming meal.
Ingredients
Meat and Oils
- 1 lb ground beef (or turkey)
- 1 tbsp olive oil
Vegetables and Aromatics
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chopped green cabbage
Grains and Liquids
- 1 cup cooked rice
- 1 can crushed tomatoes (28 oz)
- 4 cups beef broth
Seasonings
- 1 tsp paprika
- 1 tsp dried oregano
- Salt & pepper to taste
Instructions
- Brown the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned and no longer pink, breaking it up with a spoon as it cooks for even browning and flavor.
- Sauté Aromatics: Add chopped onion and minced garlic to the browned beef. Cook for 2–3 minutes until the onion becomes translucent and the mixture is fragrant, stirring occasionally to prevent sticking.
- Add Vegetables and Rice: Stir in the chopped cabbage and cooked rice, mixing well to combine all ingredients evenly in the pot.
- Incorporate Liquids and Seasonings: Pour in the crushed tomatoes and beef broth, then sprinkle the paprika, dried oregano, salt, and pepper. Stir everything together thoroughly to distribute the seasonings.
- Simmer the Soup: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer gently for 25–30 minutes, or until the cabbage is tender and flavors have melded.
- Serve: Ladle the hot soup into bowls and serve warm. Optionally, add a dollop of sour cream on top for extra creaminess and tang.
Notes
- Use brown rice for a healthier twist and extra fiber.
- This soup freezes well for up to 2 months; allow to cool before freezing in airtight containers.
- For an extra tangy flavor, add a splash of vinegar just before serving.
