Description

All the comforting flavors of classic cabbage rolls — ground beef, rice, and tomato — simmered together into a cozy, one-pot soup that’s perfect for a hearty and warming meal.


Ingredients

Meat and Oils

  • 1 lb ground beef (or turkey)
  • 1 tbsp olive oil

Vegetables and Aromatics

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chopped green cabbage

Grains and Liquids

  • 1 cup cooked rice
  • 1 can crushed tomatoes (28 oz)
  • 4 cups beef broth

Seasonings

  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt & pepper to taste


Instructions

  1. Brown the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned and no longer pink, breaking it up with a spoon as it cooks for even browning and flavor.
  2. Sauté Aromatics: Add chopped onion and minced garlic to the browned beef. Cook for 2–3 minutes until the onion becomes translucent and the mixture is fragrant, stirring occasionally to prevent sticking.
  3. Add Vegetables and Rice: Stir in the chopped cabbage and cooked rice, mixing well to combine all ingredients evenly in the pot.
  4. Incorporate Liquids and Seasonings: Pour in the crushed tomatoes and beef broth, then sprinkle the paprika, dried oregano, salt, and pepper. Stir everything together thoroughly to distribute the seasonings.
  5. Simmer the Soup: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer gently for 25–30 minutes, or until the cabbage is tender and flavors have melded.
  6. Serve: Ladle the hot soup into bowls and serve warm. Optionally, add a dollop of sour cream on top for extra creaminess and tang.
