Description

A rich, moist coffee cake layered with buttery butterscotch chips and topped with a cinnamon streusel crumble. Perfectly balanced sweetness and texture make this butterscotch coffee cake an ideal treat for breakfast or dessert.

Ingredients

Cake

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 1 teaspoon vanilla extract

Butterscotch Layer

  • 1/2 cup butterscotch chips
  • 2 tablespoons brown sugar

Streusel Topping

  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 teaspoon cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan thoroughly to ensure the cake does not stick.
  2. Make Cake Batter: In a large bowl, combine the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract. Gradually add the wet ingredients to the dry ingredients and mix until just combined to form the cake batter.
  3. Layer Batter and Butterscotch: Spread half of the cake batter evenly into the prepared pan. Sprinkle the butterscotch chips and brown sugar evenly over this layer to create the rich butterscotch center.
  4. Top with Remaining Batter: Carefully spread the remaining half of the cake batter over the butterscotch layer, smoothing the surface gently to cover the chips and sugar.
  5. Prepare Streusel Topping: In a small bowl, mix together the brown sugar, flour, and cinnamon. Add the cold cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  6. Apply Streusel and Bake: Sprinkle the streusel topping evenly over the cake batter. Place the pan in the preheated oven and bake for 30 to 35 minutes, or until the cake is golden brown on top and a toothpick inserted into the center comes out clean.
  7. Cool and Serve: Remove the cake from the oven and let it cool slightly in the pan before slicing. Serve warm alongside coffee, or optionally drizzle with butterscotch sauce for extra indulgence.

Notes

  • Serve warm with coffee for a classic pairing.
  • Drizzle with butterscotch sauce for added sweetness and moisture.
  • Ensure butter for streusel topping is cold to get the best crumbly texture.
  • Can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
