Ingredients

For the Bruschetta:

4 Roma tomatoes, diced (Roma tomatoes work best due to their firm texture and lower moisture content)

Instructions

Step 1: Prepare the Bruschetta

  1. Core and dice the Roma tomatoes into small cubes. Remove the seeds if you prefer a less watery dip.

  2. In a medium bowl, combine the diced tomatoes with the chopped basil and minced garlic.

  3. Drizzle in the extra virgin olive oil and balsamic vinegar, and sprinkle with a pinch of salt. Toss everything gently to combine.

  4. Let the mixture sit for about 10 minutes to marinate. This allows the tomatoes to release their natural juices and absorb the flavors of the garlic, basil, and vinegar.

Step 2: Prepare the Cheese Mixture

  1. While the tomatoes are marinating, prepare the cheese mixture. In a food processor, combine the crumbled fetacream cheesesour creamminced garliclemon juice, and olive oil.

  2. Blend for 3-4 minutes, or until the mixture is smooth and creamy. Scrape down the sides of the bowl as needed to ensure everything is fully incorporated.

  3. Taste the mixture and adjust the seasoning with salt if necessary. Be cautious, as the feta can be quite salty on its own.

Step 3: Assemble the Dip
