Description
These keto brownie waffles are rich, fudgy, and chocolatey with only 3 net carbs per serving. Made with peanut butter, cocoa powder, and sugar-free chocolate chips, they’re a quick and healthy low-carb breakfast or snack.
Ingredients
1 heaping tablespoon sugar-free peanut butter
1 large egg
2 teaspoons unsweetened cocoa powder
2 teaspoons monkfruit sweetener (optional)
Pinch of salt
1½ tablespoons sugar-free semi-sweet chocolate chips, divided
1–2 teaspoons water, as needed
Instructions

In a small bowl, mix peanut butter, egg, cocoa powder, salt, sweetener, and 1 tablespoon chocolate chips until smooth.

Add 1–2 teaspoons of water to thin if the batter is too thick.

Preheat a mini waffle maker according to the manufacturer’s instructions.

Spoon half the batter into the waffle maker and sprinkle with half of the remaining chocolate chips.

Cook for 2–3 minutes, or until steam subsides. Carefully remove and repeat with the rest of the batter.
