Description
A rich and creamy soup combining tender potatoes, fresh broccoli, and melted cheddar cheese for a classic comforting dish that warms you up on chilly days.
Ingredients
Vegetables
- 2 cups broccoli florets
- 2 large potatoes, diced
- 1 small onion, chopped
Dairy & Fat
- 2 cups cheddar cheese, shredded
- 1 cup milk
- 2 tbsp butter
Other
- 2 tbsp flour
- 3 cups vegetable or chicken broth
- Salt and pepper to taste
Instructions
- Sauté Onions: Melt butter in a pot over medium heat and sauté the chopped onion until soft and translucent, about 5 minutes.
- Add Flour: Stir in the flour and cook for 1 minute to form a roux, which will help thicken the soup.
- Add Broth and Vegetables: Gradually add the vegetable or chicken broth while stirring, then add the diced potatoes and broccoli florets. Bring the mixture to a simmer and cook until the vegetables are tender, approximately 15 minutes.
- Incorporate Dairy: Stir in the milk and shredded cheddar cheese, allowing the cheese to melt completely while stirring frequently to avoid curdling.
- Blend Soup (Optional): Partially blend the soup using an immersion blender or carefully transfer some to a blender to achieve your desired creamy texture while leaving some chunks if preferred.
- Season and Serve: Season the soup with salt and pepper to taste. Serve hot for a comforting meal.
Notes
- Use sharp cheddar for a stronger, more pronounced cheese flavor.
- Blend fully for a smooth soup texture or leave it chunky based on preference.
- Adding diced carrots during the simmering step adds extra sweetness and nutrition.
