Description

Crisp, bubbly, and refreshingly tart, this Blueberry Lime Rickey blends juicy blueberries with fresh lime juice and sparkling water. Lightly sweetened and beautifully vibrant, it’s the perfect warm-weather cocktail or mocktail that can easily be adjusted to suit your preference for alcohol or sweetness.

Ingredients

Base

  • ½ cup fresh blueberries
  • 1 oz fresh lime juice
  • ¾ oz simple syrup (adjust to taste)

Alcohol (Optional)

  • 2 oz gin or vodka (optional)

To Serve

  • Sparkling water or club soda, to top
  • Ice
  • Lime wheel and blueberries, for garnish

Instructions

  1. Muddle the blueberries: Add blueberries to a glass or shaker and muddle them thoroughly until they release their juicy flavor.
  2. Add lime juice and sweetener: Pour in fresh lime juice and simple syrup, then add gin or vodka if using.
  3. Mix with ice: Fill the glass or shaker with ice and stir or shake briefly to combine the ingredients and chill the mixture.
  4. Strain into glass: Strain the mixture into a tall glass filled with fresh ice to keep the drink cold and refreshing.
  5. Top with sparkling water: Add sparkling water or club soda to fill and provide a bubbly finish.
  6. Garnish and serve: Garnish with a lime wheel and fresh blueberries, then serve immediately for the best flavor and fizz.

Notes

  • Traditionally made with gin, but vodka works well too.
  • For a classic non-alcoholic Lime Rickey, omit the alcohol entirely.
  • Adjust sweetness depending on blueberry ripeness.
  • For extra color, muddle a few berries directly in the serving glass.
