Description

Fluffy blueberry biscuits accented with juicy bursts and topped with a zippy lemon glaze. A quick and delightful treat perfect for breakfast, brunch, or a snack

Ingredients

Dry
2 cups all-purpose flour
4 teaspoons baking powder
1/3 cup sugar
1 teaspoon salt

Wet
1 cup cold milk
5 tablespoons cold or frozen butter, grated or small pieces

Mix-ins
3 ounces blueberries (fresh or dried)

Glaze
1 cup powdered sugar
1/8 cup water
1 teaspoon vanilla extract
1/2 teaspoon lemon juice

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet.

  2. Combine flour, baking powder, sugar, and salt.

  3. Incorporate cold butter until crumbly.

  4. Fold in blueberries gently.

  5. Stir in milk until just combined.

  6. Pat dough to 1-inch thickness and cut biscuits.

  7. Bake for 12–15 minutes until golden.

  8. While baking, whisk glaze ingredients together.

  9. Drizzle glaze over warm biscuits. Serve.

Notes

  • Handle the dough gently to preserve flakiness. Glaze adds a lemony lift but is optional. Best enjoyed fresh or reheated briefly.
