Description

This Black Bean Crunch Wrap Supreme is a deliciously crispy and cheesy vegetarian wrap loaded with bold Tex-Mex flavors. It features seasoned black beans, fresh vegetables, and crunchy tostada shells, all wrapped in a warm flour tortilla and cooked to golden perfection in a skillet. A perfect homemade twist on a fast-food favorite, ideal for lunch or dinner.

Ingredients

Wrap

  • 2 large flour tortillas

Filling

  • 1 cup canned black beans, drained and seasoned
  • ½ cup shredded cheese (cheddar or Mexican blend)
  • ½ cup shredded lettuce
  • ¼ cup diced tomatoes
  • 2 tablespoons sour cream
  • 2 small tostada shells or tortilla chips

For Cooking

  • Oil, for cooking (about 1 tablespoon)

Instructions

  1. Warm the tortillas: Slightly warm the flour tortillas in a dry skillet or microwave for about 20 seconds to make them more pliable and easier to fold.
  2. Assemble the wrap: In the center of each tortilla, layer the seasoned black beans, shredded cheese, sour cream, shredded lettuce, diced tomatoes, and place one tostada shell or a handful of tortilla chips on top for crunch.
  3. Fold the wrap: Carefully fold the edges of the tortilla tightly inward toward the center to enclose the filling and form a wrap shape.
  4. Heat the skillet: Place a non-stick skillet over medium heat and add a small amount of oil to prevent sticking and help crisp up the wrap.
  5. Cook the wrap: Place the wrap seam-side down in the skillet to seal it and cook until the bottom is golden brown and crispy, about 3-4 minutes. Carefully flip and cook the other side until golden and the cheese is melted, about another 3-4 minutes.
  6. Serve: Remove the wrap from the skillet and serve hot. Optional sides include salsa or guacamole for dipping.

Notes

  • Add taco seasoning to the black beans before assembling for enhanced Tex-Mex flavor.
  • Serve with salsa, guacamole, or sour cream on the side for extra taste.
  • Use gluten-free tortillas to make this recipe gluten-free if desired.
  • For a vegan version, substitute cheese and sour cream with plant-based alternatives.
