Description

A creamy, high-protein clafoutis made with cottage cheese, eggs, and berries. Easy, low-calorie, and comes together in just ten minutes.


Ingredients

2 cups full-fat cottage cheese
4 large eggs
4 tbsp sweetener (erythritol, monk fruit, honey, or maple syrup)
1 tsp vanilla extract
2 tbsp cornstarch or coconut flour
1½ cups berries (fresh or frozen)
1 tsp lemon zest (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and prepare baking dish.

  2. Blend cottage cheese until smooth.

  3. Add eggs, sweetener, vanilla, cornstarch (or coconut flour), and lemon zest, and blend briefly.

  4. Pour into dish and bake 10–15 minutes until edges set and center jiggly.

  5. Scatter berries over top and return to oven for 30–35 minutes until golden and slightly wobbly.

  6. Allow to cool slightly before slicing and serving warm.

Notes

Full‑fat cottage cheese gives best texture. Thaw and drain frozen berries. Use coconut flour for keto version.
