Crispy, golden beef taquitos filled with seasoned ground beef and melted cheese, perfect for a delicious Mexican-inspired appetizer or dinner. These taquitos can be baked or air-fried to achieve a satisfying crunch with a gooey, flavorful filling.

- 1 lb ground beef
- 1 tsp taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)

- 4 large tortillas (flour or corn)
- 1 tbsp olive oil
Instructions
- Preheat the oven or air fryer: Preheat your oven to 400 °F (200 °C) if baking, or preheat your air fryer to 400 °F for air frying.
- Cook the beef: In a skillet over medium heat, brown the ground beef, breaking it up as it cooks. Once almost cooked through, sprinkle in the taco seasoning and stir well to incorporate the flavors. Remove from heat and mix in the shredded cheese until melted and combined.
- Assemble the taquitos: Lay out each tortilla flat, evenly distribute the beef and cheese mixture down one edge of each, then tightly roll each tortilla around the filling.
- Prepare for cooking: Place the rolled taquitos seam-side down on a baking sheet if baking, or on the air fryer basket tray. Brush each taquito lightly with olive oil to help them crisp up beautifully.
- Bake or air fry: Bake in the oven for 12–15 minutes or air fry for 8–10 minutes, flipping halfway through air frying, until the taquitos are golden brown and crispy on the outside.
Notes
- For extra heat, add diced jalapeños or onions to the beef mixture.
- Use corn tortillas for a gluten-free option.
