Instructions
- Brown the beef, onion, and garlic: In a large pot or Dutch oven, cook the ground beef over medium heat until it starts to brown, then add the chopped onion and minced garlic. Continue cooking until the beef is fully browned and the onion is soft. Drain excess fat for a leaner soup.
- Add tomatoes, tomato paste, broth, and seasoning: Stir in the canned diced tomatoes, tomato paste, beef broth, and Italian seasoning. Increase the heat and bring the mixture to a boil, ensuring all ingredients are well combined.
- Simmer with macaroni and vegetables: Add the uncooked elbow macaroni and optional diced carrots or celery to the boiling soup. Reduce heat to a simmer and cook for 10 to 12 minutes, or until the pasta is tender but not mushy.
- Season and serve: Taste the soup and season with salt and pepper as needed. Serve the soup warm, optionally topped with shredded cheddar cheese for added richness.
