Ingredients
Beef
- 1 lb beef sirloin or flank steak, thinly sliced
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
Vegetables
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 cup zucchini slices
- 1 carrot, julienned or sliced
Base (choose one)
- Cooked rice (white, brown, or jasmine)
- Quinoa
- Cauliflower rice
Sauce
- ¼ cup soy sauce or tamari
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar or lemon juice
- 1 tsp sesame oil
- 1 tsp cornstarch + 2 tbsp water

Instructions
- Prepare the sauce: Whisk together soy sauce or tamari, honey or maple syrup, rice vinegar or lemon juice, sesame oil, cornstarch, and water in a small bowl until smooth. Set aside.
- Cook the beef: Heat olive oil in a large skillet over medium-high heat. Season the thinly sliced beef with salt and black pepper. Add to the skillet and cook for 2–3 minutes, stirring occasionally, until just browned but not fully cooked through. Remove beef from skillet and set aside.
- Cook the vegetables: In the same skillet, add the broccoli florets, red bell pepper slices, zucchini slices, and carrot. Stir-fry the vegetables for 4–5 minutes until crisp-tender but still vibrant in color.
- Combine beef and sauce: Return the browned beef to the skillet with the vegetables. Pour the prepared sauce mixture over the beef and vegetables.
- Thicken the sauce: Cook for an additional 2–3 minutes, stirring constantly, until the sauce thickens and evenly coats the beef and vegetables.
- Serve: Serve the beef and vegetable mixture over your chosen base—cooked rice, quinoa, or cauliflower rice. Garnish with optional toppings such as green onions, sesame seeds, and avocado slices, if desired.
