Ingredients
Meat
- 1 lb beef stew meat, cut into cubes
Vegetables
- 2 cups sliced okra
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 cups diced tomatoes
Liquids
- 2 cups beef broth
- 2 tablespoons olive oil
Spices & Herbs
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- Salt to taste
- 1 bay leaf
- 2 tablespoons chopped parsley
Instructions
- Heat oil and brown beef: Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides to seal in flavors.
- Sauté onion and garlic: Add chopped onion and minced garlic to the pot and cook until softened and fragrant, about 3-4 minutes.
- Add spices: Stir in paprika, cumin, and black pepper, mixing well to coat the beef and vegetables with the spices.
- Add liquids and bay leaf: Pour in the diced tomatoes and beef broth, then add the bay leaf. Stir to combine all ingredients.
- Simmer the stew: Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for 45 minutes, or until the beef becomes tender.
- Cook okra: Add the sliced okra to the pot and continue cooking, uncovered, for another 15 minutes until okra is tender but not mushy.
- Final seasoning: Remove the bay leaf and taste the stew. Adjust salt as needed to enhance the flavors.
- Garnish and serve: Sprinkle chopped parsley over the stew before serving. Enjoy your hearty beef and okra stew with rice or crusty bread.
Notes
- Fresh or frozen okra may be used interchangeably based on availability.
- This stew pairs wonderfully with steamed rice, mashed potatoes, or crusty bread to soak up the flavorful broth.
- For a thicker stew, you can mash some of the okra during cooking as it releases natural thickening agents.
- Adjust spices to taste, adding more paprika or cumin for a bolder flavor profile.
