Tender, thinly sliced beef pairs perfectly with crisp broccoli florets, all coated in a flavorful garlic soy sauce. The quick stir-fry method ensures a fast and satisfying weeknight meal that’s both comforting and healthy.
Ingredients
Stir-Fry
- 1 lb flank steak or sirloin, thinly sliced against the grain
- 3 cups broccoli florets
- 2 tbsp vegetable or sesame oil
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated (optional)
Sauce
- ⅓ cup soy sauce (or tamari for gluten-free)
- ¼ cup beef broth or water
- 1 tbsp brown sugar or honey
- 1 tbsp cornstarch
- 1 tsp rice vinegar
- ½ tsp black pepper
Instructions
- Prepare the Sauce: In a small bowl, whisk together soy sauce (or tamari), beef broth (or water), brown sugar (or honey), cornstarch, rice vinegar, and black pepper until smooth. Set aside this savory sauce to be added later.
- Cook the Beef: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the thinly sliced beef in a single layer and cook for 2 to 3 minutes until it is just browned. Remove the beef from the pan and set aside to keep warm.
- Stir-Fry the Broccoli: Add the remaining tablespoon of oil to the same skillet. Toss in the broccoli florets and stir-fry for 3 to 4 minutes until they turn bright green and become crisp-tender, preserving a nice crunch.
- Add Aromatics: Mix in the minced garlic and grated ginger, cooking for about 30 seconds until fragrant, which enhances the dish’s depth of flavor.
- Combine and Simmer: Return the cooked beef to the pan with the broccoli and pour in the prepared sauce. Cook everything together for 2 to 3 minutes, stirring constantly, until the sauce thickens and evenly coats the beef and broccoli.
- Serve: Remove from heat and serve the beef and broccoli immediately over steamed rice or noodles for a satisfying meal.
Notes
- Slice beef very thin for the most tender result.
- Don’t overcrowd the pan—cook beef in batches if needed to ensure proper searing.
- Add red pepper flakes or chili paste for an extra kick of heat.
- Leftovers keep well refrigerated for up to 3 days.
