These Baked Spinach Mushroom Quesadillas are a savory, cheesy, and healthy option that’s perfect for lunch, dinner, or as a snack. Filled with gooey mozzarella, sharp cheddar, earthy mushrooms, and fresh spinach, all wrapped in crispy tortillas, these quesadillas are both satisfying and full of flavor!
Ingredients
4 tortillas (8-inch)
Olive oil (optional, enough to lightly coat the tortillas)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
3 cups roughly chopped spinach
8 ounces sliced mushrooms
Instructions
Preheat the Oven
Preheat your oven to 400°F (200°C).
2. Prepare the Mushrooms
Place the sliced mushrooms in a microwave-safe bowl. Microwave them for 2-3 minutes to soften. Drain any excess moisture and set aside.
3. Prepare the Tortillas
Lightly brush one side of each tortilla with olive oil (if using) and place them on a baking sheet, oiled side down.
4. Add the Cheese
Sprinkle about half of the shredded mozzarella and cheddar cheese over one half of each tortilla.
5. Layer the Vegetables
Layer the chopped spinach and softened mushrooms over the cheese, then add the remaining cheese on top.
6. Fold the Tortillas
Fold the other half of each tortilla over the filling. Garnish the top with extra mushrooms and cheese for added flavor.
7. Bake the Quesadillas
Bake the quesadillas for about 6 minutes, then carefully flip each one over and bake for another 6-7 minutes or until the cheese is melted and the tortillas are golden and crispy.
8. Serve and Enjoy
Once baked, slice the quesadillas into wedges. Serve warm and enjoy!
