Description

Juicy sirloin or flank steak marinated in a flavorful blend of balsamic vinegar, garlic, and fresh herbs, then baked to tender perfection. This recipe yields a rich, savory steak with caramelized edges and a delightful balance of tangy and aromatic notes—perfect for an impressive yet easy dinner.

Ingredients

Steak and Marinade

  • 12 lb sirloin or flank steak
  • ¼ cup balsamic vinegar
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp rosemary
  • 1 tsp thyme
  • Salt and pepper, to taste

Instructions

  1. Prepare the Marinade: In a bowl, combine balsamic vinegar, olive oil, minced garlic, rosemary, thyme, salt, and pepper thoroughly. This mixture will infuse the steak with its signature bold flavors.
  2. Marinate the Steak: Coat the sirloin or flank steak evenly with the marinade. Place it in a shallow dish or resealable bag and refrigerate for at least 30 minutes, up to 4 hours, allowing the flavors to deeply penetrate the meat.
  3. Preheat the Oven: Set your oven to 400°F (200°C) to ensure it’s hot and ready to cook the steak evenly and quickly, creating a beautiful caramelized crust.
  4. Bake the Steak: Transfer the marinated steak to a baking tray and bake in the preheated oven for 15–18 minutes, adjusting time based on your preferred level of doneness.
  5. Rest and Serve: Remove the steak from the oven and let it rest for 5 minutes. This step allows the juices to redistribute, resulting in a juicier and more tender steak. Slice against the grain and serve.

Notes

  • For a crisp crust, broil the steak for the last 2 minutes of cooking.
  • This recipe can also be adapted for grilling or air frying for a different texture and flavor.
