Description
These baked feta potatoes are a rich and satisfying side dish made with crispy roasted potatoes, a block of baked feta cheese, roasted garlic, lemon, and herbs. Inspired by the viral baked feta pasta trend, this version is comforting, savory, and incredibly flavorful.
Ingredients
2 large baking potatoes
1 block (200g) feta cheese
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried oregano
1 tsp salt
1 tsp black pepper
½ tsp red chili flakes
1 whole head of garlic (top sliced off)
1 lemon, quartered
1 tbsp honey
¼ cup fresh basil, chopped
Instructions

Preheat oven to 200°C (390°F).

Cube and parboil potatoes for 6–8 minutes. Drain and let steam dry.

Toss potatoes with oil, herbs, salt, pepper, and chili flakes. Roast 30–40 minutes until crisp.

Add feta block and garlic head to the tray. Squeeze over half the lemon. Bake for 15 more minutes.

Mash roasted garlic into a paste.

Stir garlic, remaining lemon juice, and basil into the dish. Gently mix to coat potatoes with melted feta.

Drizzle with honey and garnish with basil. Serve hot.
