Description

Ingredients

2 cups cherry or grape tomatoes

1 red bell pepper, diced

½ small red onion, diced

3 cloves garlic, minced

8 ounces feta cheese

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon sea salt

½ teaspoon dried thyme

½ teaspoon ground black pepper

½ teaspoon red pepper flakes

1 cup chopped baby spinach

4 large eggs

Optional toppings: Chopped fresh basil or fresh chives


Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Vegetables and Feta:

    • For individual servings, divide the tomatoes, bell pepper, red onion, garlic, and feta cheese among 4 oven-safe ramekins. Drizzle a tablespoon of olive oil over each.

    • For a single large dish, combine the tomatoes, bell pepper, red onion, and garlic in a large baking dish (8×8 or 9×11). Place the feta in the center and drizzle with olive oil.

  3. Add the Spices: In a small bowl, mix the oregano, salt, thyme, black pepper, and red pepper flakes. Sprinkle this spice mixture evenly over the vegetables and feta.

  4. Bake the Vegetables and Feta:

    • For individual ramekins, place them on a baking sheet, or place the large dish directly in the oven. Bake for 25 minutes until the feta is softened, and the vegetables are cooked down.

  5. Add the Spinach and Eggs:

    • Remove the dishes from the oven and stir the feta and vegetables together. Add the chopped spinach and mix it in.

    • Create a well in the center of each ramekin, or four wells in the large dish. Crack an egg into each well.

  6. Final Bake: Return the dishes to the oven and bake for another 10 minutes, or until the eggs are cooked to your preferred level of doneness.

  7. Garnish and Serve: Top with fresh herbs like basil or chives. Serve with crusty bread, pita, or toast for dipping.
