Noodles

  • 200 g udon noodles

Shrimp

  • 200 g shrimp, peeled and deveined

Sauce & Aromatics

  • 2 tbsp oil
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • 1/2 tsp chili flakes (optional)

Garnish

  • 2 green onions, sliced


Instructions

  1. Cook the noodles: Bring a pot of water to a boil and cook the udon noodles according to the package instructions, usually about 8-10 minutes. Drain and set aside to keep warm.
  2. Sauté aromatics: Heat 2 tablespoons of oil in a large pan over medium-high heat. Add the minced garlic and grated ginger, cooking them until fragrant and just starting to brown, about 1 minute.
  3. Cook the shrimp: Add the peeled and deveined shrimp to the pan and cook for 2-3 minutes on each side until they turn pink and are fully cooked through.
  4. Prepare the sauce: Stir in the soy sauce, oyster sauce, honey or brown sugar, sesame oil, and chili flakes (if using). Mix well to combine all the flavors evenly.
  5. Toss noodles with sauce and shrimp: Add the cooked udon noodles to the pan, tossing everything together so the noodles are evenly coated in the flavorful sauce along with the shrimp. Warm through for another 1-2 minutes.
  6. Garnish and serve: Remove from heat, garnish with sliced green onions, and serve immediately while hot.
