Description
This moist and tender apple almond cake is lightly spiced with cardamom and made with almond flour, making it naturally gluten-free. It’s an easy, flavorful dessert that’s perfect for any season.
Ingredients
2 medium apples, peeled and grated (about 200g)
1 ½ cups almond flour (150g)
1 teaspoon baking powder
¼ teaspoon salt
1 teaspoon ground cardamom
3 large eggs
½ cup granulated sugar (100g)
½ teaspoon vanilla extract
¼ cup unsalted butter, melted (60g)
¼ cup fresh apple juice (60ml)
Optional Glaze:
¼ cup powdered sugar (30g)
1 tablespoon fresh apple juice (15ml)
¼ teaspoon ground cinnamon
Instructions

Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan.

In a bowl, mix grated apples with apple juice. Set aside.

In another bowl, whisk almond flour, baking powder, salt, and cardamom.

In a large bowl, beat eggs and sugar until pale and fluffy. Stir in melted butter, vanilla, and apple mixture.

Fold in dry ingredients until smooth.

Pour into prepared pan. Bake for 30–35 minutes, or until a toothpick comes out clean.

Cool in pan for 10 minutes, then transfer to a wire rack.

For glaze, whisk powdered sugar, apple juice, and cinnamon. Drizzle over cooled cake.
