Ingredients

Beef Roast

  • 23 lb chuck roast
  • 2 tbsp olive oil

  • 1 tsp dried thyme or rosemary

Vegetables & Broth

  • 34 medium carrots, cut into chunks
  • 1 lb baby potatoes, halved
  • 1 small onion, quartered
  • 1 cup beef broth


Instructions

  1. Preheat Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat fully before adding the roast to ensure even cooking.
  2. Prepare Roast: Rub the chuck roast all over with olive oil, then season it evenly with salt, black pepper, garlic powder, onion powder, and your choice of dried thyme or rosemary.
  3. Initial Browning: Place the seasoned roast in the air fryer basket and air fry for 20 minutes. This step browns the exterior, creating a caramelized crust and enhancing flavor.
  4. Add Vegetables and Broth: Arrange the carrot chunks, halved baby potatoes, and quartered onion around the roast in the air fryer. Pour 1 cup of beef broth into the bottom of the basket or under the roast if your air fryer has a tray, to keep the meat moist during cooking.
  5. Continue Cooking: Air fry everything together for an additional 30–40 minutes, flipping the roast halfway through the cooking time to ensure even doneness. Cook until the internal temperature reaches 195°F (90°C) if you want shreddable meat.
